Our restaurant is a true celebration of local in every sense, growing the freshest produce in our own garden and the De Rust Futura school garden on our estate, and sourcing the best ingredients from our neighbours in the Elgin valley. The complete dining experience at our restaurant is as much a product of our passion for country living, wholesome dishes, fine wine and family, as it is Chef Stacey’s flair for culinary storytelling.
Our concept is simple, seasonal and local, and we can think of no greater champion for this than Chef Stacey Lee Chan. As the first ever South African to win gold at the Chaines des Rotisseurs Commis Rotisseurs, Stacey’s multi-faceted career has included cheffing, consulting and international judging. Her inspiration is rooted in simplicity – the essence of fresh ingredients treated simply and served generously, the beautiful balance that comes from considered food and wine pairing, and the memories that these moments create.
